The origin of dumplings
Originally named Jiao Er, Jiaozi is said to be the first invention of Chinese medical sage Zhang Zhongjing. The story of his "cold dispelling Jiao Er Soup" has been passed down among the people. There is a folk saying "delicious but dumplings". According to legend, when Zhang Zhongjing was the governor of Changsha, he often treated diseases for the people. One year, when the local plague was prevalent, he built a big pot at the yamen gate and gave up medicine to save people. Zhang Zhongjing's medicine is called "Dispelling Cold Jiao Er Tang". The recipe is to boil mutton and some herbs for dispelling cold in a pot, cut them up, wrap them into ear-shaped "Jiao er" in a dough wrapper, boil them and give them to patients begging for medicine. Two Jiao ear each, a bowl of soup. Zhang Zhongjing gave up medicine until the New Year's Eve. On the first day of the New Year, people celebrate the New Year and also celebrate the recovery of rotten ears. They make food like Jiao Er and eat it on the morning of the New Year. People call the food jiaoer, jiaozi or bian Shi, and eat it on the winter solstice and the first day of the New Year to commemorate the day when Zhang Zhongjing opened his hut to cure the sick.
